- 3 tbsp black tahini (about 60g / 2 oz)
- 2 cloves black garlic or 2 tsp black garlic paste
- 1 lemon, juiced
- ½ tsp ground cumin
- ¼ – ½ tsp sea salt (adjust depending on if chickpeas are already salted)
- 3 tbsp cold water (iced or ice cubes work best)
Chickpeas
- 240 g black chickpeas, ready cooked
Optional Ingredients
- 1 tsp toasted sesame seed oil
- Extra virgin olive oil for drizzling
- Black sesame seeds for sprinkling
Instructions
- Prepare the base mixture: Blend black tahini, black garlic (or paste), lemon juice, ground cumin, sea salt, and cold water together in a powerful blender. If you don’t have a blender, use a food processor, though the texture may be less smooth. Add toasted sesame seed oil here if using.
- Add chickpeas and blend: Reserve a few black chickpeas for garnish if desired. Add the remaining chickpeas to the blender with the optionally added sesame oil. Blend on medium setting until the mixture reaches a smooth hummus consistency. Add more water if the hummus is too stiff.
- Taste and adjust seasoning: Taste the hummus and add more salt, lemon juice, or water to balance flavors and texture according to your preference.
- Serve and garnish: Transfer the hummus to a serving bowl. Drizzle with good quality extra virgin olive oil, garnish with the reserved chickpeas and sprinkle black sesame seeds if desired.
