Description

This comforting Yellow Squash Casserole combines tender cooked yellow squash and onions with a creamy mixture of eggs, milk, and cheese, all topped with buttery crushed crackers baked to golden perfection. It’s a perfect side dish for any meal that brings warmth and a delightful savory flavor.

Ingredients

Vegetables

  • 4 cups yellow squash, sliced
  • 1/2 cup white onion, diced

Wet Ingredients

  • 2 Tablespoons water
  • 2 eggs, beaten
  • 3/4 cup milk
  • 1/4 cup butter, melted
  • 2 Tablespoons butter (for topping)

Dry Ingredients

  • 1 sleeve of buttered cracker rounds, crushed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the casserole.
  2. Prepare Squash Mixture: In a deep 12-inch skillet, combine the sliced yellow squash, diced onion, and 2 tablespoons of water. Cook over medium heat just until the pan is hot, then cover with a lid and reduce the heat to medium-low. Let the squash cook for about 5 minutes until tender.
  3. Mix Crackers and Cheese: Remove the skillet from heat and stir in half of the crushed buttered cracker rounds along with half of the shredded cheddar cheese, mixing them evenly with the squash and onion.
  4. Add Wet Ingredients and Seasoning: To the mixture, add the beaten eggs, milk, melted butter, salt, and black pepper, stirring thoroughly to combine all ingredients well.
  5. Assemble Casserole: Transfer the mixture into a baking dish if your skillet is oven-safe, or use the same skillet if it can go in the oven. Evenly sprinkle the remaining crushed cracker rounds and shredded cheese on top of the mixture for a crunchy and cheesy crust.
  6. Top with Butter: Dot the top of the casserole with the 2 tablespoons of butter to help the topping brown nicely during baking.
  7. Bake: Place the casserole in the preheated oven and bake for 25 minutes until the top is golden brown and bubbly.
  8. Serve: Remove from the oven and let it cool slightly before serving. Enjoy your delicious Yellow Squash Casserole!

Notes

  • Use fresh, firm yellow squash for the best texture and flavor.
  • If you prefer a spicier kick, add a pinch of cayenne pepper or paprika to the seasoning mix.
  • The casserole can be prepared ahead of time and baked just before serving.
  • For a gluten-free version, substitute the buttered cracker rounds with gluten-free crackers.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
