Ingredients
Chocolate Waffle Batter
- ½ cup salted butter
- 1 cup sugar

- 4 large eggs (beaten)
- 1 tsp vanilla extract

- Melt the chocolate and butter: Melt the butter in a small saucepan over medium heat. Place the dark chocolate in a medium mixing bowl, then pour the melted butter over the chocolate along with the vanilla extract. Stir continuously until the chocolate is completely melted and the mixture is smooth.
- Add the sugar: Pour the sugar into the chocolate and butter mixture and stir thoroughly until combined and smooth.
- Build the batter: Add the all-purpose flour, sifted cocoa powder, and sea salt to the chocolate mixture. Stir until the batter is thick and resembles cookie dough in texture.
- Incorporate the eggs: Gradually pour the beaten eggs into the batter while whisking. Continue whisking until the batter becomes shiny, mostly smooth, and thick like a rich cake or brownie batter.
- Cook the waffles: Preheat your waffle iron or pan. Use a large cookie scoop (about 3 tablespoons) to place heaping scoops of batter onto the center of each waffle section. Close the lid and cook for 2–3 minutes until the waffles are cooked on the outside but remain slightly gooey inside.
- Chill the waffles: Carefully remove the waffles from the iron and arrange them in a single layer on a wire rack. Transfer them to the freezer for at least 15–20 minutes to cool and slightly harden.
- Assemble the ice cream sandwiches: Place half of the cooled waffles on serving plates. Top each with a scoop of your favorite ice cream.
