Ingredients
Seafood and Soup
- 12 oz. Langostino lobster tails, defrosted
- 16 oz. lobster bisque soup
Vegetables and Aromatics
- 1 pint cherry tomatoes
- 1 small shallot, minced
- 2 cloves garlic, minced
Pasta and Cheese
- 16 oz. rigatoni pasta
- ½ cup Parmesan cheese, grated
- ¼ cup fresh basil, chiffonade
Other
- 1 tablespoon olive oil (more if needed)
- 1 cup reserved pasta water
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta water before draining the pasta.
- Caramelize Shallots: In a 5-quart stock pot over medium heat, warm a drizzle of olive oil. Add the minced shallot and cook for about 5 minutes, stirring occasionally, until the shallots become golden brown and slightly caramelized, enhancing their sweetness.
- Sauté Garlic: Add the minced garlic to the caramelized shallots and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Cook Tomatoes: Add the pint of cherry tomatoes to the pot. Cook for about 5 minutes or until the tomatoes soften and begin to burst. Use a fork or potato masher to gently mash the tomatoes, creating a chunky sauce base.
- Add Lobster and Bisque: Stir in the defrosted Langostino lobster tails and the lobster bisque soup. Heat through gently to combine the flavors, taking care not to overheat since the lobster is already cooked.
- Combine Pasta and Sauce: Add the drained rigatoni pasta back to the pot with the lobster bisque sauce. If needed, add some of the reserved pasta water to loosen the sauce and help it coat the pasta beautifully.
- Finish and Serve: Remove from heat and stir in the grated Parmesan cheese and fresh basil chiffonade. Serve immediately, garnished with additional Parmesan and basil if desired.
Notes
- You can use regular cooked lobster or imitation lobster if Langostino is unavailable.
- Reserve pasta water is key to adjusting the sauce consistency.
- Be careful not to overheat the lobster when adding it to avoid toughness.
- Use freshly grated Parmesan for best flavor.
- Fresh basil chiffonade enhances aroma and presentation.
