Description

This Vegetarian Lasagna Rolls recipe combines tender zucchini ribbons, creamy ricotta and cheese filling, and rich pasta sauce to create a delicious and easy Italian dinner option. Perfectly baked until bubbly and golden, these rolls are a comforting and flavorful meal that’s simple to prepare and sure to impress.

Ingredients

Cheese Filling

  • 1 ½ cup ricotta cheese
  • 1 egg
  • ½ cup chopped mushrooms
  • ⅓ cup shredded parmesan cheese
  • ⅓ cup shredded mozzarella cheese

Lasagna Rolls

  • 6 lasagna noodles
  • 2 medium sized zucchinis (shaved into ribbons)
  • 24 ounces pasta sauce
  • ¼ cup shredded mozzarella cheese (for topping)

Instructions

  1. Preheat Oven: Preheat the oven to 375 degrees Fahrenheit and lightly coat a medium-sized baking dish with nonstick spray. Set aside to prepare the ingredients.
  2. Prepare Cheese Filling: In a mixing bowl, combine the ricotta cheese and egg until well blended. Stir in the shredded mozzarella, parmesan cheese, and finely chopped mushrooms thoroughly. Chill in the refrigerator until ready to use.
  3. Cook Noodles: Boil the lasagna noodles in a large pot of salted water until they are slightly underdone, about 6-7 minutes. Drain and lay them flat to cool with a little moisture left to prevent sticking.
  4. Create Zucchini Ribbons: Using a vegetable peeler, shave the zucchinis lengthwise to create thin ribbons.
  5. Assemble Rolls: Lay the noodles flat and layer the zucchini ribbons evenly across each noodle, covering end to end. Spread a generous layer of the chilled cheese and mushroom filling on top of the zucchini-covered noodles. Carefully roll up each noodle, placing the seam side down.
  6. Prepare for Baking: Spread the pasta sauce evenly in the bottom of the prepared baking dish. Arrange the lasagna rolls seam-side down in a staggered pattern within the sauce.
  7. Add Topping and Bake: Sprinkle the remaining ¼ cup of shredded mozzarella on top of the rolls. Bake uncovered for 25 minutes. For a bubbly, golden top, switch the oven to broil and broil on high for a few minutes at the end of baking.
  8. Serve: Garnish the lasagna rolls with fresh parsley and serve warm for a comforting and flavorful vegetarian dinner.

Notes

  • Do not overcook noodles as they will continue cooking in the oven.
  • Keep noodles slightly wet after draining to prevent sticking.
  • Feel free to add other vegetables like spinach or bell peppers to the cheese filling for variation.
  • Broil carefully to avoid burning the cheese topping.
  • Can be made ahead and refrigerated before baking for convenience.
