- 60g light brown sugar
- 30ml dairy-free milk
- 210g all purpose / plain flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon bicarbonate of soda
- 1 teaspoon ground all spice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Apple Pie Filling
- 120g chopped apples (preferably red apples, diced in small squares)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground all spice
- 1/4 teaspoon ground nutmeg
- 30g caster sugar
- 2 teaspoons cornflour / cornstarch
- Juice of 1 lemon
Cream and Topping
- 150ml dairy-free whipping cream (e.g., The Coconut Collaborative Double Cream)
- Vegan caramel sauce (homemade or store bought, for drizzling)
Instructions
- Preheat the Oven: Set your oven to 180°C fan and line two baking trays with grease proof paper to prepare for baking the cookies.
- Make the Cookie Dough: In a mixing bowl or stand mixer fitted with the paddle attachment, combine the dairy-free butter, caster sugar, and light brown sugar. Whip until the mixture is light and creamy. Add the dairy-free milk and continue to whip until just combined.
- Add Dry Ingredients: Sift in the all-purpose flour, baking powder, bicarbonate of soda, ground all spice, cinnamon, and nutmeg. Mix gently until just incorporated to avoid overworking the dough.
- Shape the Cookies: Scoop cookie dough balls of approximately 45g using an ice cream scoop or spoon. Roll each ball in caster sugar to coat, then lightly flatten them. Use the back of a spoon or fingertips to create a well in the center of each cookie dough ball for the filling.
- Prepare Apple Pie Filling: In a medium saucepan over low to medium heat, combine the diced apples, cinnamon, all spice, nutmeg, caster sugar, cornflour, and lemon juice. Stir continually for 5-8 minutes until the mixture thickens and apples soften. Remove from heat and let cool for about 5 minutes.
- Fill Cookies: Spoon the cooled apple pie filling into the wells of each cookie dough ball. Sprinkle additional caster sugar over filling if desired.
- Bake the Cookies: Place cookies on the prepared baking trays, spacing them apart as they will spread. Bake in the center of the oven for 12-14 minutes or until cookies are lightly golden.
- Shape Post-Baking: Remove cookies from the oven, then use a round cookie cutter to gently re-shape the cookies into neat circles while they are still warm and slightly pliable.
- Cool the Cookies: Allow the cookies to cool completely on the baking trays before decorating.
- Whip the Dairy-Free Cream: Using a stand mixer with a balloon whisk attachment or a hand mixer, whip the dairy-free whipping cream on high speed until thick and fluffy. Transfer to a piping bag fitted with a star tip nozzle.
- Decorate the Cookies: Once the cookies are completely cool, pipe a swirl of whipped cream on top of each cookie for a beautiful finish.
- Add Caramel Drizzle (Optional): Drizzle vegan caramel sauce over the cream for an extra layer of sweetness and authentic apple pie flavor.
- Serve and Enjoy: Enjoy these delicious vegan apple pie cookies as a delightful dessert or snack.
