Ingredients

Vegetables

  • 1 small bunch Chinese broccoli, about 6 stems

Noodles & Oils

Instructions

  1. Prep the Broccoli: Place a small pot of water over medium-high heat and bring it to a rapid boil. Meanwhile, prepare the Chinese broccoli by cutting the thick stems into 3-inch pieces and halving them vertically. When the water boils, add the stems and blanch for 2 minutes. Then add the leafy tops and cook for another 30 seconds until wilted and bright green. Remove with a slotted spoon and transfer to a paper-towel-lined plate. Set aside.
  2. Make the Sauce: In a small bowl, whisk together soy sauce, sugar, toasted sesame oil, fish sauce, lime juice, and white pepper until well combined. Set aside.
  3. Stir Fry Mushrooms and Aromatics: Heat a large sauté pan or wok over medium-high heat. Add the neutral oil and then the sliced shiitake mushrooms. Sauté, stirring frequently, until the mushrooms are soft and golden brown, about 5-7 minutes. Add the grated garlic and sliced Serrano chili, cooking for another 1-2 minutes until fragrant. Transfer this mixture to a clean bowl and return the pan to the heat.
  4. Cook the Noodles with Sauce: Add the prepared sauce and udon noodles to the pan. Cook while stirring occasionally until the sauce reduces slightly and thoroughly coats the noodles, about 3-5 minutes.
  5. Combine and Finish: Return the mushroom and broccoli mixture to the pan with the noodles. Toss everything together until heated through and well combined, about 1-2 minutes.
