Ingredients
Eggs and Butter
- 3 large eggs (beaten)
- 2 Tbsp butter
Meat and Vegetables
- 1 lb lean ground beef
- 1 bunch green onions (thinly sliced and divided)
- 2/3 cup frozen petite peas
Oils and Sauces
- 3 Tbsp olive oil
- 1/2 cup teriyaki sauce
- 1 tsp toasted sesame oil
- Few dashes sriracha sauce (Optional)
Seasonings and Others
- 1 tsp garlic salt
- 1/2 tsp black pepper
- 1 tsp brown sugar
- 1/4 tsp ground ginger
- 4-5 cups cooked long grain rice (cooled)
- 1 Tbsp toasted sesame seeds
Instructions
- Cook the eggs: Melt 1 Tbsp of butter in a large skillet over medium heat. Pour in the beaten eggs lightly seasoned with table salt, cooking them in one solid sheet. Carefully fold and remove the eggs from the skillet, then slice into strips and set aside.
- Sauté the beef: Drizzle the same skillet with olive oil. Add the ground beef, most of the sliced green onions (reserving 2 Tbsp for garnish), garlic salt, and black pepper. Cook over medium-high heat until the beef is fully browned without any pink remaining. Drain any excess fat from the pan.
- Prepare the sauce: In a small bowl, whisk together the teriyaki sauce, toasted sesame oil, brown sugar, ground ginger, and optional sriracha sauce to create a flavorful blend.
- Combine rice and peas: Add the prepared sauce, cooled rice, and frozen petite peas to the skillet. Cook over medium heat, stirring constantly, just until the peas start to thaw and everything is well mixed.
- Finish the dish: Return the egg strips to the skillet along with the remaining 1 Tbsp butter. Stir until the butter has melted evenly into the mixture, then remove the skillet from heat.
- Serve and garnish: Immediately plate the fried rice, garnishing with toasted sesame seeds and the reserved green onions for a fresh finish.
Notes
- Use day-old rice or rice that has been cooled to prevent soggy fried rice.
- Adjust sriracha quantity based on your preferred spice level or omit for a milder flavor.
- Lean ground beef is preferred to reduce grease; drain fat to keep the dish light.
- For extra vegetable variety, consider adding diced carrots or bell peppers.
- Ensure constant stirring when cooking rice and peas to prevent sticking or burning.
