Instructions
- Prepare. Preheat your oven to 350°F and prepare your baking sheet by lining it with parchment paper or a baking mat to ensure the cookies don’t stick.
- Dry Ingredients. In a medium bowl, whisk together the flour, baking powder, baking soda, and cream of tartar until fully combined.
- Beat. In a large mixing bowl, beat the softened butter and sugar alternative on high speed until the mixture is smooth and fluffy. Add the egg and vanilla extract, then beat again until everything is well combined.
- Combine. Use a rubber spatula to scrape down the sides of the mixing bowl. Set the mixer to medium speed and gradually add the dry ingredients, mixing until just combined and the dough starts pulling away from the sides of the bowl.
- Divide. Divide the dough into sections based on the number of Jello colors you plan to use. For example, if using four colors, divide into four equal parts. If using one color, no division is needed.
- Jello. Add two teaspoons of the first sugar-free Jello powder to the first section of dough and knead until the color is evenly incorporated. Use food prep gloves if desired. Add more gelatin powder if you want a stronger color, then repeat this process for each section of dough with different colors.
- Dough. Using a cookie scoop, portion out dough balls and roll them into smooth balls. Place them on the prepared baking sheet about two inches apart. Flatten each ball to about ½ inch thick using the palm of your hand.
- Bake. Bake the cookies in the preheated oven for 8-10 minutes, or until the edges appear set. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
