Ingredients
For the Crust
- 1 1/2 cups all purpose flour
- 1/4 tsp salt
- 8 tbsp unsalted butter (very cold)
- 1 large egg
- 1 tsp white vinegar
- 1 tbsp water (very cold)
For the Filling
- 1 lb strawberries (fresh)
- 5 tbsp sugar
- 2 tbsp corn starch
For the Topping
- 1 egg (whisked)
- 2 tbsp coarse sugar
Instructions
- Make Crust: Combine the flour and salt in a food processor or large bowl. Add the very cold butter sliced into pieces and pulse or rub it in with your fingers until the largest pieces are about the size of peas.
- Whisk Egg Mixture: In a separate bowl, whisk together the egg, white vinegar, and very cold water until well combined.
- Form Dough: Add the egg mixture to the dry ingredients and mix until a dough forms. If the dough feels too dry, add additional cold water a little at a time until it clumps when pressed.
- Chill Dough: Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.
- Preheat Oven and Roll Dough: Preheat your oven to 400°F (200°C). Place the chilled dough on a sheet of parchment paper and roll it out into a 12-inch circle. Slide the parchment paper with the rolled dough onto a baking sheet.
- Prepare Strawberry Filling: Slice the strawberries about 1/4 inch thick. In a bowl, toss the sliced strawberries with sugar and cornstarch until evenly coated. This mixture will thicken as it bakes.
- Assemble Galette: Spoon the strawberry filling onto the center of the dough, spreading it out evenly while leaving a 2-inch border around the edges. Fold the edges of the dough over the filling, creating a rustic crust edge.
- Apply Egg Wash and Sugar: Brush the crust with the whisked egg to give it a golden color when baked. Sprinkle the coarse sugar over the crust for a sweet, crunchy finish.
- Bake: Bake the galette in the preheated oven for 35-40 minutes or until the crust turns golden brown and the strawberry juices are bubbling.
- Cool and Serve: Remove the galette from the oven and let it cool for 15-30 minutes before slicing. Serve warm or at room temperature and enjoy your delicious homemade strawberry galette!
Notes
- Make sure the butter and water are very cold to achieve a tender, flaky crust.
- You can substitute coarse sugar with turbinado or sanding sugar for the topping.
- Allowing the galette to cool slightly helps the filling to set and makes slicing easier.
- This galette is best served within a day or two, but can be refrigerated and gently reheated before serving.
