Ingredients
Ingredients
- 1 head of cauliflower, riced (see note)
- 3 cloves garlic, minced
- 1/2 cup cilantro, minced
- 1 tablespoon chipotle in Adobo sauce, minced
- 1 tablespoon olive oil
Instructions
- Heat Olive Oil: Heat about 1 tablespoon of olive oil in a 10-inch skillet over medium heat.
- Sauté Garlic: Add minced garlic to the skillet and sauté until fragrant, about 1-2 minutes, being careful not to burn it.
- Cook Cauliflower Rice: Add the riced cauliflower to the skillet and stir well to combine with the garlic and oil.
- Add Flavorings: Stir in minced cilantro and chipotle peppers in Adobo sauce. Continue cooking and stirring until the cauliflower softens, about 5 minutes.
- Garnish and Serve: Remove from heat and garnish with additional fresh cilantro if desired before serving.
Notes
- To rice cauliflower, pulse florets in a food processor until they reach a rice-like texture.
- You can adjust the amount of chipotle in Adobo sauce to vary the spice level to your preference.
- This dish is great served as a side or used as a base for bowls and burrito fillings.
