Ingredients
Chicken Meatballs
- 1 pound ground chicken
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- ¾ teaspoon salt
- ½ teaspoon red pepper flakes
- 3 tablespoons honey
- 1 teaspoon apple cider vinegar
Buffalo Ranch Dipping Sauce
- ¼ cup ranch dressing
- 2 tablespoons buffalo sauce (like Moore’s or Frank’s)
- 2 tablespoons honey
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400 degrees F and line a baking sheet with heavy-duty foil. If available, place a wire baking rack on top of the foil and spray it or directly spray the foil with cooking spray to prevent sticking.
- Mix Meatball Ingredients: In a large bowl, combine the ground chicken, garlic powder, chili powder, cumin, paprika, salt, and red pepper flakes. Mix thoroughly until all the spices are evenly incorporated into the chicken.
- Form Meatballs: Shape the chicken mixture into uniform meatballs and arrange them in a single layer on your prepared baking sheet or wire rack.
- Initial Bake: Bake the meatballs for 15 minutes to cook them partially through.
- Prepare Honey Glaze: While the meatballs are baking, mix the honey and apple cider vinegar in a small bowl until well combined.
- Glaze Meatballs and Finish Baking: After the initial bake, brush the honey glaze generously over each meatball. Return them to the oven for an additional 10 to 15 minutes, or until fully cooked and glazed.
- Make Dipping Sauce: In a separate bowl, combine the ranch dressing, buffalo sauce, and honey. Mix well, then refrigerate until ready to serve.
- Serve: Remove the meatballs from the oven and transfer them to a serving platter. Serve immediately with the chilled buffalo ranch dipping sauce on the side.
Notes
- Using a wire rack allows the meatballs to cook evenly and stay crispy all around.
- Adjust the amount of red pepper flakes if you prefer less or more heat.
- The honey glaze adds a nice balance of sweetness to the spice, but you can omit or reduce the honey for a less sweet version.
- These meatballs can be made ahead and reheated before serving.
- For a lower-fat option, use ground turkey instead of chicken.
