Ingredients
Spaghetti
- 16 oz spaghetti
Vegetables
- 2 medium roma tomatoes, diced
- 1 medium cucumber, diced
- 1 small sweet onion, chopped
- ½ red pepper, diced
- 1-2 carrots, finely sliced
Seasonings & Dressing
- 3/4 cup Italian dressing
- 2 tablespoons pasta & salad seasoning (e.g., Johnny’s)
- Salt, to taste
Instructions
- Cook the spaghetti: Bring a large saucepan of salted water to a boil. Break the dry spaghetti into three segments for easier handling, then add to the boiling water. Cook the pasta until al dente, typically about 8-10 minutes, then drain and rinse under cold water to stop cooking and cool the pasta.
- Prepare the vegetables: Dice the roma tomatoes, cucumber, and red pepper. Chop the sweet onion and finely slice the carrots. Combine all these fresh vegetables in a large mixing bowl.
- Toss salad together: Add the cooled spaghetti to the bowl of vegetables. Pour in the Italian dressing and add the pasta & salad seasoning. Toss everything together thoroughly to evenly coat the pasta and vegetables with the dressing and seasoning.
- Chill before serving: Cover the salad with plastic wrap or a lid and place in the refrigerator. Chill for at least 1 hour to allow the flavors to meld and for the salad to be served cold and refreshing.
- Serve: Remove from the refrigerator, taste and adjust salt if needed, then serve chilled for best flavor and texture.
Notes
- Ensure to rinse the cooked pasta with cold water to prevent it from sticking and to cool it down for the salad.
- The pasta & salad seasoning can be substituted with Italian seasoning or any favorite seasoning blend if desired.
- For added protein, consider tossing in cooked chicken, tuna, or beans.
