Description
Southern Hush Puppies are a classic Southern American fried snack made from a simple cornmeal batter mixed with onions and spices, fried until golden and crispy on the outside with a tender interior. Perfect as a side dish for seafood, barbecue, or just enjoyed on their own.
Ingredients
Dry Ingredients
- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper
Wet Ingredients
- 1 small onion, finely chopped
- ½ cup buttermilk
- 1 large egg
- 1 quart vegetable oil (for frying)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the yellow cornmeal, all-purpose flour, baking powder, salt, and cayenne pepper until evenly combined.
- Prepare Oil: Pour vegetable oil into a heavy pot to a depth of about 2 inches and heat it to 375°F, ensuring the oil is hot enough for proper frying.
- Mix Wet Ingredients: Stir in the finely chopped onion, buttermilk, and egg into the dry mixture. Mix just until combined, making sure the batter is thick enough to hold its shape on a spoon without being runny.
- Fry the Hush Puppies: Carefully drop rounded tablespoons of batter into the hot oil a few at a time, avoiding crowding the pot. Fry for 3 to 4 minutes or until they turn a deep golden brown all over.
- Drain and Salt: Use a slotted spoon to remove the hush puppies and place them on a plate lined with paper towels to drain excess oil. While still hot, season with salt to taste.
- Repeat Frying: Allow the oil to return to 375°F before frying the next batches for consistent frying temperature and texture.
- Serve: Serve the hush puppies immediately while warm and crispy for the best taste and texture.
Notes
- Ensure oil temperature is maintained at 375°F for crispy, evenly cooked hush puppies.
- Do not overmix the batter; a slightly thick consistency is ideal.
- Use fresh oil to avoid off-flavors and soggy texture.
- Season with additional salt or spices if desired immediately after frying.
- Hush puppies are best served fresh but can be kept warm in a low oven for a short time.
