Ingredients

Potatoes

  • 4.5 pounds baby yellow potatoes (slice half of baby potatoes, leave other half whole)

Seasoning and Oil

  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon burger seasoning
  • 1 teaspoon steak seasoning


Instructions

  1. Clean Potatoes: Scrub baby potatoes thoroughly with a vegetable brush under cold running water to remove any dirt. Pat them dry completely with paper towels to ensure the oil and seasoning stick well.
  2. Prepare Potatoes: Place the potatoes on a large half-size sheet pan. Drizzle evenly with the extra virgin olive oil to coat all the potatoes.
  3. Season Potatoes: Sprinkle the burger seasoning and steak seasoning evenly over the potatoes. Use your hands to toss and mix everything ensuring all potatoes are well coated with oil and seasonings.
  4. Preheat Smoker: Preheat your smoker to 225°F (107°C) to prepare for slow smoking the potatoes.
  5. Smoke Potatoes: Place the sheet pan with the potatoes in the smoker uncovered. Smoke for 2 hours, checking and stirring the potatoes every 15 minutes to prevent scorching and ensure even cooking.
  6. Crisp Edges: After 2 hours, check if potatoes are fork tender and golden brown on the edges. If edges are not crispy, increase the smoker temperature to 350°F (177°C) and continue cooking for about 15 minutes or until desired crispiness is achieved.
  7. Serve: Serve the smoked potatoes directly from the sheet pan or transfer to a cast iron skillet to keep warm, perfect for serving alongside your meal.
