Description
A wholesome and flavorful Slow Cooker Lentil Curry served with steamed rice and vegetables. This easy-to-make recipe combines fragrant spices, creamy coconut milk, and hearty lentils for a comforting, nutritious meal perfect for any day of the week. Can be prepared using a Buydeem Two-Tier Intelligent Food Steamer or a traditional slow cooker.
Ingredients
Lentil Curry
- 1/2 cup brown or green lentils, rinsed
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1 large clove of garlic, minced
- 1 tsp fresh minced ginger
- 1 tsp onion powder
- 2 tsp curry powder
- 1 tsp garam masala
- 1 tsp coconut sugar
- 1/2 tsp salt
- 1 cup vegetable broth
- 1/4 cup coconut milk
- 1/4 cup fresh cilantro, for serving
Rice
- 1 cup rice, rinsed well
- 1 cup water
Vegetables
- 2 cups veggies of choice
Instructions
- Prepare Steamer or Slow Cooker: For the Buydeem Food Steamer, fill the stew pot water tank with water just below the maximum line and power it on. For the slow cooker method, prepare a large slow cooker for cooking.
- Assemble Ingredients in Pans: In one stew pot, add rinsed rice and water, and cover. In the other, combine rinsed lentils, olive oil, tomato paste, garlic, ginger, onion powder, curry powder, garam masala, coconut sugar, salt, and vegetable broth, stirring well and covering with the lid. For slow cooker, combine the lentil curry ingredients, stirring to mix.
- Cook Lentils and Rice with Vegetables: Insert the stew pots into the steamer stand and cover with the two-tiered lid. Steam on steam mode for 55 minutes. After 45 minutes, add chosen vegetables to the ceramic tray and steam for the last 10 minutes. For slow cooker, cover and cook on high for 3-4 hours until lentils are tender.
- Finish and Serve: Carefully remove the lid and stew pots from the steamer. Stir coconut milk into the lentil curry. For slow cooker, stir in coconut milk after cooking ends. Serve the lentil curry over steamed or cooked rice, topped with steamed vegetables and garnished with fresh cilantro.
Notes
- You can choose any vegetables you like for steaming, such as carrots, bell peppers, broccoli, or green beans.
- If using a regular slow cooker, triple the lentil curry ingredients to ensure sufficient volume for cooking.
- Rinsing rice and lentils well helps to remove impurities and improves texture.
- Adjust the curry powder and garam masala amounts according to your spice preference.
