Ingredients

Shrimp and Seasoning

  • 1 lb 16/20-count jumbo shrimp (peeled and deveined)
  • Old Bay seasoning, to taste

Vegetables and Aromatics

  • 1 bunch asparagus (3/41 lb, ends trimmed then cut into 2” pieces)
  • 1 shallot or small onion (chopped)
  • 4 cloves garlic (pressed or minced)
  • 1 lemon (zested then sliced in half)

Oils and Seasonings

  • 3 Tablespoons extra virgin olive oil (divided)
  • Salt and pepper, to taste

  • Cooked white or brown rice, or sautéed cauliflower rice
  • Chopped fresh parsley, for garnish


Instructions

  1. Dry and Season Shrimp: Pat the shrimp very dry using paper towels to ensure a good sear. Season both sides generously with Old Bay seasoning and set aside.
  2. Cook the Shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and sauté for 2–3 minutes per side, or until the shrimp are opaque and cooked through. Remove shrimp from the skillet and set aside on a plate.
  3. Sauté Vegetables: Add the remaining 2 tablespoons of olive oil to the skillet. Add the asparagus pieces and chopped shallot, season with salt and pepper, and sauté for 4–5 minutes until asparagus is crisp tender. Add the minced garlic and sauté for an additional 1 minute until very fragrant.
  4. Combine and Finish: Return the cooked shrimp to the skillet. Add the lemon zest and squeeze the juice of half the lemon over the mixture (use less if the lemon is large). Toss everything together to combine and reheat the shrimp briefly.
  5. Serve: Scoop the shrimp and asparagus mixture into bowls alongside cooked white or brown rice, or sautéed cauliflower rice. Garnish with chopped fresh parsley and serve with the remaining lemon half cut into wedges for extra freshness.
