Ingredients

Vegetables and Lentils

  • 12 ounces small Yukon gold or red potatoes (1 to 2 inches across), quartered

  • 8 ounces cherry tomatoes
  • 1 (15-ounce) can lentils, rinsed and drained well

Seasoning and Oil

  • 2 1/2 tablespoons extra-virgin olive oil, divided
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon pepper, divided

  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh parsley

Instructions
