- Scramble the Eggs: Coat a frying pan with nonstick cooking spray and place over medium heat. Crack the eggs and scramble them gently until just cooked. Remove from heat and set aside for later use.
- Prepare the Vegetables: Dice the white parts of the scallions and separate them from the greens. Remove seeds from the jalapeño peppers and dice finely. Mince the garlic cloves and shallot finely to release their flavors.
- Sauté Aromatics: In a large skillet, heat the sesame oil over medium heat. Add the diced white scallions, jalapeños, garlic, and shallot. Cook, stirring occasionally, until the vegetables soften and become fragrant, about 3 to 5 minutes.
- Add Sardines: Drain the sardines slightly but keep the oil, then add the sardines and their oil to the skillet. Use a wooden spoon to gently break the sardines into smaller pieces, incorporating them with the sautéed vegetables.
- Combine Rice and Sauce: Add the cooked white rice to the skillet along with the soy sauce. Toss everything together thoroughly to evenly coat the rice with the flavors, ensuring a uniform mix.
- Finish the Dish: Remove the skillet from the heat. Fold in the scrambled eggs and the green parts of the scallions, mixing gently to combine without breaking up the eggs too much. Serve warm.
