Ingredients

  • 2 Tablespoons butter (divided)
  • 2 cups rotisserie chicken (shredded)
  • 2 eggs (whisked)

  • 3 cloves garlic (minced)
  • 2/3 cup frozen peas
  • 3 green onions (sliced)

  • 4 cups rice (cooked and cooled)

Instructions

  1. Scramble the eggs: Heat 1 tablespoon of butter in a large skillet or wok over medium-high heat. Once melted, pour in the whisked eggs and scramble them gently until fully cooked. Remove the eggs from the skillet and set aside on a plate.
  2. Sauté shallot and garlic: Add the remaining tablespoon of butter to the now-empty skillet or wok. Heat until melted, then add the minced shallot. Season with salt and pepper and sauté for 2-3 minutes until the shallot softens. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add chicken, rice, and vegetables: Turn the heat to high. Add the shredded rotisserie chicken, cooked and cooled rice, frozen peas, and sliced green onions to the skillet. Pour in the soy sauce and oyster sauce, stirring everything to combine thoroughly.
  4. Fry until crispy: Continue cooking the mixture over high heat for about 3 minutes, stirring occasionally, to let the rice brown slightly and develop a crispy texture.
  5. Combine with eggs and serve: Return the scrambled eggs to the skillet, stirring them into the fried rice to evenly distribute. Serve immediately for best flavor and texture.
