Description

This Roasted Garlic White Bean Dip is a creamy, flavorful spread made from butter beans and roasted garlic, enhanced with fresh herbs and olive oil. Perfect as a healthy appetizer or snack, it pairs wonderfully with chips or fresh vegetables and offers a smooth texture with aromatic herbal notes.


Ingredients

Beans and Garlic

  • 16 ounces any white beans (1 can – butter beans, 425g)
  • 3 cloves roasted garlic

Seasonings and Herbs

  • 1/2 teaspoon sea salt (3g)
  • 1/2 teaspoon freshly ground black pepper (1g)
  • 1 teaspoon chopped oregano (1g)
  • 1 teaspoon chopped basil (1g)
  • 1 teaspoon chopped parsley (1g)

Liquids

  • 3-4 tablespoons olive oil (45-60mL)
  • 2 tablespoons room temperature water (30mL)

Garnish

  • Olive oil to drizzle
  • Parsley to garnish


Instructions

  1. Prepare the Beans: Drain the white beans from their liquid and rinse them thoroughly in a strainer. Then, gently pat the beans dry to remove excess moisture for a better dip consistency.
  2. Blend Ingredients: In a food processor, combine the drained white beans, roasted garlic cloves, sea salt, black pepper, fresh chopped oregano, basil, parsley, olive oil, and water. Blend all the ingredients until the mixture is smooth and creamy. Adjust the olive oil if you prefer a thinner texture, and add extra seasonings accordingly to maintain flavor.
  3. Chill the Dip: Transfer the blended dip into a bowl and refrigerate it for about 2 hours if possible. This resting time allows the flavors to meld together and intensify, enhancing the overall taste.
  4. Serve: Before serving, drizzle some extra olive oil on top and garnish with fresh parsley. Present the dip with chips or your favorite dippers and enjoy.

Notes

  • Using roasted garlic gives the dip a mellow, sweet garlic flavor; if unavailable, you can roast fresh garlic cloves in the oven until soft and caramelized.
