Ingredients
Candy Coating
- ½ cup red candy melts
- ½ cup blue candy melts
- 2 Tbsp vegetable shortening
- 6 Tbsp confectioners sugar (divided)
- 2 cups Rice Chex cereal (divided, 1 cup each)
Additional Mix-ins
- ½ cup red, white, and blue M&Ms
- ½ cup yogurt covered raisins
- 2 cups yogurt covered pretzels
Instructions
- Melt Red Candy Coating: In a double boiler or microwave-safe bowl, melt ½ cup red candy melts with 1 tablespoon vegetable shortening. If microwaving, heat in 30-second increments, stirring between, until smooth and fully melted.
- Prepare Sugar Coating Setup: Place 3 tablespoons of powdered sugar into a large zip-close bag. Lay out parchment or wax paper on a flat surface for drying the coated cereal.
- Coat Red Rice Chex: Pour 1 cup of Rice Chex into the melted red candy. Gently stir until every piece is thoroughly coated.
- Powder Sugar Coating: Transfer the coated cereal into the zip-close bag with powdered sugar, gently toss and shake to evenly coat. Pour the coated cereal through a sieve and shake to remove excess sugar.
- Cool Red Coated Cereal: Spread the coated Rice Chex evenly on the parchment paper to cool and harden.
- Repeat for Blue Candy Coating: Repeat steps 1 through 5 using the blue candy melts, 1 tablespoon shortening, 3 tablespoons powdered sugar, and the second cup of Rice Chex cereal.
- Assemble Snack Mix: Once both red and blue coated Rice Chex are cooled and hardened, combine them in a large bowl along with 2 cups yogurt covered pretzels, ½ cup of the red, white & blue M&Ms, and ½ cup yogurt covered raisins. Stir gently to mix evenly.
- Store Properly: Transfer the snack mix to an airtight container to keep fresh until serving.
