Description
A vibrant and refreshing Red Fruit Salad combining juicy watermelon, sweet strawberries, cherries, and raspberries, lightly tossed in a zesty lime-mint dressing with strawberry preserves. Perfect as a light dessert or a healthy snack during warm days.
Ingredients
For the Dressing
- 2 tablespoons strawberry jam or preserves
- 1 small/medium lime, juiced
- 1 tablespoon fresh mint, thinly sliced
- 1 tablespoon fresh basil, thinly sliced
For the Salad
- 1½ pounds watermelon, cut into bite-size pieces
- 1 pound strawberries, hulled and quartered (halved if small)
- 1 pound sweet cherries, pitted and halved
- 8 ounces raspberries
Instructions
- Prepare the Dressing: In a large mixing bowl, combine the strawberry jam or preserves, freshly squeezed lime juice, and the thinly sliced basil and mint leaves. Whisk these ingredients thoroughly until the mixture is smooth and evenly combined.
- Add the Main Fruits: Into the same bowl, add the prepared watermelon chunks, quartered strawberries, and halved sweet cherries. Gently toss these fruits with the dressing to ensure they are evenly coated without breaking the fruit pieces.
- Incorporate the Raspberries: Finally, add the raspberries to the fruit mixture and gently toss them in to combine, being careful to keep the delicate berries intact.
- Chill Before Serving: Cover the salad and place it in the refrigerator to chill until you are ready to serve. This allows the flavors to meld and the salad to be enjoyed refreshingly cold.
Notes
- Use fresh, ripe fruits for the best flavor and texture.
- You can substitute fresh mint and basil with other herbs like cilantro or basil alone if preferred.
- This salad is best served chilled but can be kept refrigerated for up to 24 hours.
- For an added twist, a splash of sparkling water or a handful of chopped nuts can be mixed in before serving.
- Ensure cherries are properly pitted to avoid any choking hazards.
