Description

These Raspberry Bliss Balls with Dates are a quick and healthy no-bake snack that combines the natural sweetness of Medjool dates with fresh or frozen raspberries, oats, and coconut. Packed with nutrients and easy to make in just five minutes, these bliss balls are perfect for a guilt-free treat or on-the-go energy boost.

Ingredients

Dry Ingredients

  • 1 1/2 cups rolled oats
  • 1 1/2 cups desiccated coconut
  • 2 tablespoons chia seeds
  • pinch of salt
  • 3 tablespoons acai powder (optional)

Wet Ingredients

  • 1 1/3 cups raspberries (fresh or frozen)
  • 18 Medjool dates, pitted (approx. 330 grams without pits)
  • 1 teaspoon vanilla paste or extract

For Rolling

  • Extra coconut or cacao powder
  • Optional: melted dark chocolate for drizzling

Instructions

  1. Prepare the ingredients: Gather all your ingredients and ensure the Medjool dates are pitted. If the raspberries are frozen, you can use them straight from the freezer.
  2. Blend the mixture: Place the rolled oats, desiccated coconut, raspberries, dates, vanilla, chia seeds, acai powder (if using), and salt into a food processor. Blend for a couple of minutes, stopping occasionally to scrape down the sides, until the mixture breaks down and starts to stick together, forming a slightly sticky dough.
  3. Shape the bliss balls: Using your hands, roll the mixture into firm balls of your preferred size. If desired, roll each ball in extra coconut or cacao powder to coat the outside.
  4. Optional garnish: For an extra indulgent touch, drizzle the bliss balls with melted dark chocolate, then let the chocolate set.
  5. Chill and serve: Place the bliss balls in the refrigerator until firm and ready to serve. Enjoy chilled for the best texture and flavor.

Notes

  • Use fresh or frozen raspberries depending on availability; frozen raspberries will make the mixture slightly more moist.
  • Medjool dates should be soft for easier blending; if hard, soak them in warm water for 10 minutes before use.
  • Acai powder is optional but adds a nice antioxidant boost and vibrant color.
  • Store bliss balls in an airtight container in the refrigerator for up to one week or freeze for longer storage.
  • Feel free to customize by adding nuts or seeds for extra crunch if desired.
