Ingredients

For the Cookies

  • 1½ cups quick-cooking oats

  • 1/2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 cup unsalted butter (melted and slightly cooled)
  • 1 cup light brown sugar (packed)
  • 1/3 cup granulated sugar
  • 1/3 cup pumpkin butter
  • 1 large egg (room temperature)
  • 1 Tbsp. vanilla extract

For the Glaze

  • 1½ cups powdered sugar
  • 2-3 Tbsp. whole milk
  • 1 Tbsp. light corn syrup
  • 1/2 tsp. vanilla extract
  • Pinch of salt


Instructions

  1. Combine the dry ingredients: In a medium bowl, whisk together the quick oats, all-purpose flour, pumpkin pie spice, ground cinnamon, baking soda, baking powder, and kosher salt. Set aside.
  2. Mix the wet ingredients: In a large mixing bowl, whisk together the melted and slightly cooled unsalted butter, light brown sugar, and granulated sugar until smooth and well combined. Add the pumpkin butter, large egg, and vanilla extract and whisk until fully incorporated.
  3. Make the cookie dough: Add the dry ingredients to the wet ingredients and gently fold together with a rubber spatula just until combined, avoiding overmixing to keep the cookies tender.
  4. Chill the dough: Cover the cookie dough and refrigerate for 20-30 minutes. Meanwhile, preheat the oven to 350°F and line baking sheets with parchment paper or silicone mats.
  5. Scoop and shape: Scoop approximately 2 tablespoon-sized portions of dough onto the prepared baking sheets, spacing about 2 inches apart. Gently flatten the tops with your fingers to encourage even spreading and achieve the classic oatmeal cookie shape.
