Description
This Peanut Butter Granola Recipe is a delicious and easy-to-make snack, combining creamy peanut butter, oats, and natural sweeteners to create crunchy clusters perfect for breakfast or a healthy treat.
Ingredients
Wet Ingredients
- 1/2 cup natural peanut butter (creamy or crunchy)
- 2 tablespoons coconut oil (or your favorite oil)
- 1/3 cup pure maple syrup (or honey or your favorite sweetener)
- 1 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
Dry Ingredients
- 3 cups old fashioned rolled oats
Instructions
- Preheat Oven: Preheat the oven to 325 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper and set aside to prepare for baking.
- Combine Wet Ingredients: Place the peanut butter and coconut oil in a large microwave-safe bowl and heat for 30 seconds or until melted and smooth. Stir to combine.
- Mix Ingredients: Add the maple syrup, ground cinnamon (if using), and salt to the melted mixture, stirring well to combine. Then add the rolled oats and stir until the oats are fully coated with the peanut butter mixture.
- Pour onto Pan: Pour the oat mixture onto the prepared baking sheet and spread it evenly to about 1/4 inch thickness. Press the mixture down firmly to pack it tightly, which helps create large granola clusters.
- Bake: Bake on the middle rack of the oven for 25 minutes or until the granola turns golden brown. Do not stir while baking to allow clusters to form.
- Cool: Remove the granola from the oven and allow it to cool completely on the pan without stirring, which will set the clusters.
- Break into Clusters: Once fully cooled, break the granola into large chunks or clusters as preferred. Store in an airtight container at room temperature for freshness.
Notes
- Use creamy or crunchy natural peanut butter based on your texture preference.
- Maple syrup can be substituted with honey or any preferred liquid sweetener.
- Pressing the granola mixture firmly before baking helps create bigger clusters.
- Do not stir the granola while baking or cooling to maintain clusters.
- Store the granola in an airtight container at room temperature to keep it fresh and crunchy.
