Instructions
- Prepare the peach yogurt base: Add about half of the frozen sliced peaches, the Greek yogurt, honey, cornstarch, and ground cardamom to the bowl of a food processor. Process the mixture until it becomes smooth and creamy, ensuring all ingredients are well combined.
- Add chunkier peaches: Add the remaining half of the frozen peaches to the food processor. Pulse a few times just until the peaches break down into large chunks, giving the popsicles a nice texture with some fruit pieces.
- Fill popsicle molds: Spoon the peach yogurt mixture carefully into popsicle molds, filling each mold evenly. Insert the popsicle sticks into the molds, then cover them to prevent freezer odors.
- Freeze until solid: Place the molds in the freezer and allow them to freeze solid, usually for at least 5 hours depending on your freezer’s settings. Once fully frozen, run the molds under warm water for a few seconds to loosen the popsicles, then gently slide them out for serving.
