Ingredients

Peach Mixture

  • 3 cups peeled peaches, diced
  • 3 tablespoons maple syrup
  • 1 teaspoon fresh lemon juice
  • ½-1 teaspoon cinnamon (or more to taste)

Overnight Oats Base

  • 2 cups rolled oats
  • 4 tablespoons chia seeds
  • 1-2 tablespoons maple syrup
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 cup yogurt (plain or vanilla)
  • 2 cups milk (any kind)


Instructions

  1. Sauté Peaches: Add the peeled and diced peaches to a saucepan over medium heat along with 3 tablespoons of maple syrup and cinnamon. Sauté for 4 to 5 minutes until the peaches become tender and fragrant.
  2. Add Lemon Juice and Cool: Turn off the heat and stir in the fresh lemon juice to brighten the flavor. Set the peach mixture aside to cool completely. Reserve 1 cup of the cooked peaches for topping later.
  3. Combine Ingredients: Once the cooked peaches have cooled, in a large bowl combine the rolled oats, chia seeds, yogurt, milk, vanilla extract, salt, 1-2 tablespoons maple syrup, and the remaining cooked peach mixture. Mix well until fully combined.
  4. Refrigerate Overnight: Cover the bowl or divide the mixture into individual containers. Place in the refrigerator for at least 4 hours or preferably overnight to allow the oats and chia seeds to soften and flavors to meld.
  5. Serve: When ready to enjoy, top each serving with the reserved cooked peaches. Optionally, reheat the peaches before topping to serve them warm and syrupy.
