Bruschetta

  • 6 slices ciabatta bread
  • 2 tbsp olive oil
  • 1/2 clove garlic

To Garnish

  • Pea shoots
  • Fresh parmesan
  • Lemon zest
  • Black pepper
  • Extra virgin olive oil


Instructions

  1. Prepare the Pea Topping: Place frozen peas, pea shoots if using, grated parmesan, olive oil, lemon juice, half garlic clove, salt, and pepper in a food processor. Pulse until you obtain a rough paste. Set aside while you prepare the toast.
  2. Preheat the Broiler or Grill: Get your broiler or grill heating so that it’s ready to toast the bread slices.
  3. Prepare the Bread: Drizzle the ciabatta slices evenly with 2 tablespoons of olive oil.
  4. Toast the Bread: Place the bread under the broiler or on the grill and toast each side for 2-3 minutes, or until the bread is crisp and golden brown.
  5. Garlic Rub: While the toast is still warm, gently rub the surface with the remaining half garlic clove to infuse mild garlic flavor.
