Description

Oven Baked Hamburger Steaks are a comforting and flavorful dish featuring oval-shaped ground beef patties baked to perfection and smothered in a rich homemade beef gravy. This hearty meal is perfect for a family dinner and pairs wonderfully with mashed potatoes or rice to soak up the delicious sauce.

Ingredients

Hamburger Steaks

  • 2 lbs ground beef (85/15 or 80/20)
  • 1 small finely minced sweet onion
  • 2 large eggs (lightly beaten)
  • 2 Tbsp Worcestershire sauce or steak sauce
  • 2/3 cup panko breadcrumbs OR fresh breadcrumbs
  • 1 1/2 tsp seasoned salt
  • 1 tsp black pepper
  • 1 tsp granulated garlic or garlic powder
  • 1 tsp onion powder

Gravy

  • 3 Tbsp unsalted butter or salted butter
  • 3 Tbsp all purpose flour
  • 2 cups beef broth or beef stock
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Chopped fresh parsley for garnishing

Instructions

  1. Preheat Oven: Preheat the oven to 375°F. Lightly spray a 13×9-inch baking dish with cooking spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the ground beef, finely minced sweet onion, lightly beaten eggs, breadcrumbs, Worcestershire sauce, seasoned salt, black pepper, onion powder, and garlic powder. Mix gently until just combined to maintain tender texture.
  3. Form Patties: Shape the mixture into six oval-shaped patties and place them evenly in the prepared baking dish.
  4. Bake Patties: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the patties are cooked through with clear juices collecting in the pan.
  5. Rest Patties: Remove the hamburger steaks from the oven, transfer to a plate, and tent loosely with foil to keep warm while preparing the gravy.
  6. Prepare Gravy Base: On the stovetop, melt the butter in a medium saucepan over medium heat. Add the flour and stir continuously for 1-2 minutes to create a roux without browning it.
  7. Add Liquids and Seasonings: Whisk in the pan drippings and beef broth gradually to avoid lumps. Add salt and black pepper to taste. Bring the mixture to a gentle simmer, then reduce heat and let it bubble gently to thicken for about 5 minutes.
  8. Combine and Serve: Return the baked hamburger steaks to the baking dish and spoon the thickened gravy evenly over the top. Garnish with freshly chopped parsley and serve hot, ideally accompanied by mashed potatoes or rice to enjoy the flavorful gravy.

Notes

  • Use a lean to moderately fatty ground beef (85/15 or 80/20) for juicy, flavorful patties.
  • Do not overmix the beef mixture to keep the patties tender.
  • Breadcrumbs help bind the patties but can be substituted with crushed crackers if preferred.
  • Adjust seasoning and gravy thickness by varying salt, pepper, and broth quantities to taste.
  • For gluten-free option, use gluten-free breadcrumbs and flour in the gravy.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat nicely.
