Perfect for parties, holidays, or anytime you want a quick, indulgent treat.
Ingredients
Main Ingredients
- 1 package (16 ounces) Nutter Butter Cookies
- 8 ounces cream cheese (softened)
- ⅔ cup peanut butter
- 1 teaspoon cooking oil
For Dipping
- 12 ounces chocolate (chopped, for dipping – milk, semi-sweet, or dark chocolate)
- Finely chopped peanuts (for topping)
Instructions
- Prepare the workspace. Line a baking sheet with parchment paper and set it aside to use later for placing the finished truffles.
- Crush the cookies. Place the Nutter Butter cookies in a food processor and blend until they form fine crumbs, ensuring the mixture is uniform.
- Form the dough. Add the softened cream cheese and peanut butter to the cookie crumbs in the food processor. Process everything again until the mixture forms a sticky and cohesive dough.
- Shape the truffles. Roll the dough into 1-inch balls and set them on the prepared baking sheet. Once all balls are shaped, freeze the tray for about 30 minutes to firm up the truffles.
- Melt the chocolate. Place the chopped chocolate along with the cooking oil in a microwave-safe bowl. Microwave for 45 seconds, then stir. Continue microwaving in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
- Coat the truffles. Remove the truffles from the freezer. Dip each ball gently into the melted chocolate, turning it to coat fully. Use a fork to lift it out and slide the bottom of the fork along the edge of the bowl to remove excess chocolate. Place the coated truffle on the parchment paper and immediately sprinkle with finely chopped peanuts.
- Repeat and set. Continue dipping and topping all the truffles. Once finished, refrigerate the coated truffles for at least 10 minutes to allow the chocolate to set completely.
Notes
- Use softened cream cheese to ensure smooth mixing with the cookie crumbs and peanut butter.
- Adjust the peanut butter quantity slightly for a firmer or softer dough if needed.
- For best results, chill the truffles before dipping to prevent them from falling apart in the melted chocolate.
- Choose your preferred type of chocolate—milk, semi-sweet, or dark—to customize sweetness level.
- Store finished truffles in an airtight container in the refrigerator for up to one week.
