Ingredients
Sweet Potatoes
- 2-3 sweet potatoes, halved or cubed
- 2 tablespoons olive oil
- 2 teaspoons toasted sesame seeds
- 1-2 tablespoons scallions, chopped small
Miso Butter
- 4 tablespoons unsalted butter, softened
- 1 tablespoon sweet white miso paste
- 1/16 teaspoon ground ginger (a very small pinch)
- Few turns cracked black pepper
Instructions
- Preheat oven. Set your oven to 425°F (220°C) to prepare for roasting the sweet potatoes.
- Prepare the miso butter. In a small bowl, combine the softened unsalted butter with sweet white miso paste, ground ginger, and cracked black pepper. Mix thoroughly until the ingredients are well blended. Set aside.
- Prepare the sweet potatoes. Wash and slice your sweet potatoes in half. Drizzle olive oil over them to ensure even roasting.
- Roast one side. Place the sweet potato halves cut side down on a baking tray. Roast for 28-30 minutes or until the side in contact with the tray turns golden brown.
- Flip and finish roasting. Turn the sweet potatoes over and roast for another 15-20 minutes until they are fork-tender and cooked through.
- Assemble and serve. Remove the roasted sweet potatoes from the oven. Top each piece with a dollop of miso butter, sprinkle toasted sesame seeds and chopped scallions on top. Serve warm and enjoy this flavorful side.
Notes
- For extra flavor, allow the miso butter to soften a little before mixing for easier blending.
- You can adjust the amount of miso paste to make it more or less salty and umami-tasting.
- Use sweet white miso paste as it is milder and sweeter than darker varieties, which complements the sweet potatoes well.
- Make sure the potatoes are fork-tender before removing from the oven to ensure the best texture.
- Toast sesame seeds in a dry pan for a couple of minutes to bring out their nutty aroma before adding.
