Description

These Mediterranean Turkey Burgers are a flavorful and healthy twist on classic burgers, featuring extra-lean ground turkey combined with feta, gruyere, kalamata olives, fresh herbs, and a touch of horseradish mustard. Perfect for a quick and satisfying grilled meal, these patties deliver a blend of savory, tangy, and herbal notes in each juicy bite.

Ingredients

Turkey Burger Mixture

  • 1 lb extra-lean ground turkey (1% fat recommended)
  • 20 g (about 1/4 cup) green onion, chopped
  • 35 g (about 1/4 cup) pitted kalamata olives, sliced or chopped
  • 2 oz (57 g) feta cheese, crumbled
  • 1 oz (30 g) gruyere cheese, shredded
  • 1 tbsp fresh Italian parsley, finely chopped (or 1 tsp dried parsley)
  • 1 tbsp fresh dill, finely chopped (or 1 tsp dried dill)
  • 4 tsp horseradish Dijon mustard
  • 1 large egg
  • 1/4 tsp Kosher salt
  • 1/4 tsp cracked black pepper

Instructions

  1. Mix Ingredients: In a medium bowl, combine the ground turkey, chopped green onions, kalamata olives, crumbled feta, shredded gruyere, finely chopped Italian parsley and dill, horseradish Dijon mustard, egg, kosher salt, and cracked black pepper. Mix well until all ingredients are fully incorporated.
  2. Form Patties: Shape the turkey mixture into 4 equal-sized patties, roughly 1 inch thick. Set the patties aside on a plate to rest briefly while you prepare your grill.
  3. Preheat Grill: Preheat your grill to medium-high heat, targeting a temperature of approximately 450°F (230°C) to ensure a perfect sear and even cooking.
  4. Grill Burgers: Place the turkey patties on the preheated grill. Cook them for 6 to 7 minutes on each side, flipping carefully, until the internal temperature reaches 165°F (74°C) to ensure they are safely cooked through and juicy inside.
  5. Serve: Serve the Mediterranean turkey burgers with your preferred toppings. Popular options include serving on a brioche bun with horseradish dill slaw, or placing the patties directly on slaw or salad for a low-carb option. Sliced red onion and tomato also make excellent toppings for added freshness and crunch.

Notes

  • Using extra-lean turkey (1% fat) helps the burgers hold together better and reduces grease flare-ups on the grill, but higher fat percentages can be used for juicier results.
  • If fresh parsley or dill is unavailable, dried herbs can be substituted, though the flavor will be less vibrant—use 1 teaspoon dried parsley and dill in place of 1 tablespoon fresh.
  • Always use a meat thermometer to ensure the burgers reach a safe internal temperature of 165°F (74°C).
  • To avoid sticking, oil the grill grates lightly before placing the patties.
  • For extra flavor, let the formed patties rest in the refrigerator for 10-15 minutes before grilling.
  • Feel free to experiment with toppings such as tzatziki, avocado, or roasted red peppers to complement the Mediterranean flavors.
