Ingredients

- 1 bunch (45g) parsley, chopped
- 2 cups (50g) baby arugula

- 1 Tablespoon ground sumac
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon ground black pepper
- 1 1/2 teaspoons white vinegar
- 1 Tablespoon olive oil
Instructions
- Soak Onions: Place the thinly sliced red onion rings in a bowl and cover them with cold tap water. Let them soak for 10 minutes to mellow the sharpness.
- Drain Onions: Drain the water from the onions and transfer them to a large mixing bowl.
- Add Sumac: Sprinkle the ground sumac over the onions and stir well to evenly coat and infuse them with its tangy flavor.
- Add Greens and Season: Add the chopped parsley and baby arugula to the bowl along with salt, black pepper, white vinegar, and olive oil.
