Instructions
- Roast the Sweet Potatoes: Preheat your oven to 375°F (190°C). Poke each sweet potato several times with a fork or paring knife to allow steam to escape during roasting. Place the sweet potatoes on a parchment-lined baking tray and roast for about 1 hour, or until a knife inserted into the thickest part meets no resistance. Remove from the oven and allow them to cool enough to handle.
- Whip the Sweet Potatoes: Once cool, peel the sweet potatoes and discard the skins. Add the sweet potato flesh to the base of a food processor along with the mascarpone cheese, maple syrup, nutmeg, a generous pinch of kosher salt, and the room temperature butter. Pulse the food processor until the mixture is smooth and creamy. Alternatively, use a handheld mixer or immersion blender to whip the mixture for about 2 minutes until it becomes fluffy.
- Season and Serve: Taste the whipped sweet potatoes and adjust the seasoning with additional kosher salt if needed. If they are still warm, transfer to a serving bowl and serve immediately. If they have cooled during the whipping process, warm them gently in a pot over medium-low heat, stirring frequently until heated through, then serve.
