Ingredients
Oatmeal
- 1 cup (80g) rolled oats
- 1 tbsp chia seeds (optional)
- 1/2 cup (120ml) full-fat coconut milk
- 1 cup (240ml) water
- 1 tsp cane or coconut sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Coconut Sauce
- 1/2 cup (120ml) full-fat coconut milk
- 1 tbsp cane or coconut sugar
- 1 tsp tapioca or corn starch
Other
- 1-2 ripe mangoes, diced
- Toasted or black sesame seeds for garnish (optional)
Instructions
- Cook the oatmeal: Combine rolled oats, chia seeds (if using), 1/2 cup coconut milk, water, 1 tsp sugar, vanilla extract, and salt in a saucepan over medium-low heat. Stir frequently and cook for 5-7 minutes until the mixture becomes creamy and thickened.
- Set oatmeal aside: Remove the saucepan from heat. Spoon the cooked oatmeal evenly into two greased ramekins and set them aside while preparing the coconut sauce.
- Prepare the coconut sauce: In the same saucepan, add 1/2 cup coconut milk, 1 tbsp sugar, and 1 tsp tapioca or corn starch. Heat over medium heat and whisk continuously until the sauce comes to a simmer and thickens, about 2-3 minutes.
- Prepare mango: Dice ripe mangoes into chunks suitable for serving alongside the oatmeal.
- Assemble and serve: Gently flip the oatmeal from the ramekins onto plates or shallow bowls. Arrange the mango chunks beside the oatmeal, drizzle generously with the warm coconut sauce, and garnish with toasted or black sesame seeds if desired. Serve immediately.
Notes
- Chia seeds are optional but add extra texture and nutrition.
- You can substitute cane sugar with coconut sugar or any preferred sweetener.
- Use full-fat coconut milk for the best rich and creamy flavor.
- If fresh mangoes are out of season, frozen mango chunks can be used after thawing.
