Description
Kuru Kayısı Tatlısı is a traditional Turkish dessert featuring soft dried apricots poached in a fragrant lemon-infused sugar syrup. These plump apricots are then generously stuffed with creamy whole milk ricotta and garnished with finely chopped pistachios, creating a delicious balance of sweet, tangy, and creamy textures perfect for a light and elegant treat.
Ingredients
Syrup and Poaching
- 2/3 cup raw or granulated sugar
- 2 scant cups (15 oz) hot water
- 1 tablespoon fresh lemon juice
- 9 ounces soft dried apricots
Filling and Garnish
- 4 1/2 ounces (heaping 1/2 cup) whole milk ricotta
- 2 tablespoons finely chopped unsalted pistachios
Instructions
- Make the syrup. In a medium saucepan over medium-high heat, combine the sugar and hot water. Stir constantly until the sugar completely dissolves and the mixture reaches a boil. Reduce the heat to medium-low and allow the syrup to gently simmer.
- Poach the apricots. Add the fresh lemon juice to the simmering syrup, then gently stir in the dried apricots. Let them poach on medium-low heat for 20 minutes until the apricots plump up and the syrup thickens slightly, becoming infused with the apricots’ aroma. Remove from heat and set aside to cool completely.
- Stuff the apricots. Once the poached apricots have cooled, carefully open the natural split in each apricot. Use small spoons to fill each apricot generously with the whole milk ricotta, ensuring they are slightly overstuffed for a rich filling. Arrange the stuffed apricots on a large, deep serving platter as you go.
- Finish and serve. Spoon the thickened syrup around the stuffed apricots on the platter. Sprinkle the finely chopped pistachios over the top for a crunchy, nutty finish and serve immediately or chilled.
- Vegan option. For a vegan variation, substitute the ricotta with 2/3 cup of chopped walnuts to stuff the poached apricots.
- Make ahead tip. You may poach the dried apricots in the syrup 1–2 days in advance. Once fully cooled, store the apricots and syrup covered in the refrigerator until ready to stuff and serve.
