- 3 large eggs
- 2 ounces cream cheese (room temperature)
- 2 tbsp unsalted butter (room temperature)
- 1/4 cup heavy cream
- 1 tbsp Besti Monk Fruit and Allulose Sweetener
- 1/2 tsp gluten-free baking powder
- 1/4 tsp xanthan gum
- 1/2 tsp real vanilla extract
Cinnamon Sugar Coating
- 1/4 cup Besti Brown Sweetener
- 1/2 cup Besti Monk Fruit and Allulose Sweetener
- 2 tsp ground cinnamon
Cream Cheese Glaze
- 1/4 cup whipped cream cheese
- 1/4 cup Besti Monk Fruit and Allulose Powdered Sweetener
- 2 tbsp heavy cream
- 1/4 tsp real vanilla extract
Optional Topping
- Wholesome Yum Keto Maple Syrup
Instructions
- Preheat the waffle maker: Turn on your mini waffle maker and allow it to preheat fully according to the manufacturer’s instructions to ensure even cooking.
- Blend the batter: In a blender, combine all the waffle batter ingredients—coconut flour, eggs, cream cheese, butter, heavy cream, sweetener, baking powder, xanthan gum, and vanilla extract—and blend until the mixture is smooth and well combined.
- Rest the batter: Let the batter sit for a few minutes so it can thicken slightly, which helps the waffles cook to a better texture.
- Prepare cinnamon sugar: While the batter rests, mix together the Besti brown sweetener, Besti monk fruit and allulose sweetener, and ground cinnamon in a small bowl. Set this aside for coating later.
- Cook the waffles: Scoop just under 1/4 cup of batter into the preheated waffle maker. Spread it evenly with a spatula or spoon, then close the waffle maker.
- Cook fully: Cook the waffles for about 5 minutes, or until the manufacturer’s instructions indicate they are done and steam no longer escapes from the edges.
- Remove and cool: Carefully remove the hot waffle from the iron; the waffles are delicate while hot. Place them on a wire cooling rack to cool slightly.
- Coat in cinnamon sugar: While still slightly warm, coat the waffle generously with the prepared cinnamon sugar mixture for that classic churro flavor.
- Repeat cooking: Continue cooking and coating the remaining batter until all waffles are prepared.
- Make cream cheese glaze: In a small bowl, mix together the whipped cream cheese, powdered sweetener, heavy cream, and vanilla extract until smooth and creamy.
- Serve: Arrange the churro waffles on a plate, drizzle them with the cream cheese glaze, and optionally add warm keto maple syrup for extra sweetness.
Notes
- Ensure all dairy ingredients are at room temperature to get a smooth batter and glaze.
- Use a mini waffle maker for best-sized churro waffles, but a regular waffle maker can also work; just adjust the batter amount accordingly.
- Letting the batter rest is key to allowing the coconut flour to hydrate, improving waffle texture.
- Handle waffles gently when hot to prevent breakage since they are delicate immediately after cooking.
- The powdered sweetener in the glaze blends easier than granulated sweetener, ensuring a smooth finish.
- Store leftover waffles in an airtight container refrigerated for up to 3 days; reheat in a toaster or oven for best texture.
