Description

This Juicy Lucy recipe offers a delicious twist on the classic burger by stuffing the patties with gooey melted cheese. Featuring a blend of Cajun-seasoned ground beef and a cheese combo of American and pepper jack, these burgers are pan-seared or grilled to perfection and served with optional charred jalapenos for an extra kick. Perfect for gatherings, this recipe delivers six juicy, flavorful stuffed burgers in just 25 minutes.

Ingredients

Meat and Seasoning

  • 2 pounds ground beef
  • 1-2 tablespoons Cajun Seasoning Blend

Cheese

  • 6 slices American cheese
  • 6 slices Pepperjack cheese (optional, for spicy flavor; can substitute with more American cheese)

Buns and Toppings

  • 6 brioche buns (or buns of choice)
  • 3 jalapeno peppers (optional, for grilling)
  • Your favorite toppings (suggested: hot sauce and ranchero sauce)

Instructions

  1. Hand Mix: Mix the Cajun seasoning into the ground beef by hand, ensuring the spices are evenly distributed without overmixing to keep the meat tender.
  2. Form Patties: Divide the seasoned ground beef into 12 thin patties. Make 6 patties slightly larger to form the base of the burgers. Using a burger press can help create even shapes.
  3. Cheese Placement: Place a slice of American cheese and a slice of pepper jack cheese onto each of the larger patties to create the cheese filling.
  4. Stuff Patties: Top each cheese-topped larger patty with a smaller patty. Carefully press the edges together by hand to seal the cheese inside, maintaining the burger shape.
  5. Sear Burgers: Heat a bit of oil in a pan or prepare a grill. Cook the stuffed patties for 2-3 minutes per side until the cheese is melted and the burgers reach your desired doneness. Remove from heat and let rest a few minutes to allow the cheese to settle.
  6. Char Jalapenos (Optional): While the burgers cook, grill or pan-sear the jalapeno and serrano peppers for about 10 minutes, turning occasionally, until the skins are charred and blackened. Slice into rings and discard stems.
  7. Serve: Assemble the burgers on brioche buns, topping them with the sliced charred peppers and your favorite additions such as hot sauce and ranchero sauce.

Notes

  • Adjust Cajun seasoning quantity according to your spice preference.
  • Pepper jack cheese can be substituted or omitted for less spice.
  • Jalapenos and serrano peppers add smoky heat when grilled but are optional.
  • Letting the burgers rest after cooking ensures the cheese stays gooey inside without leaking out.
  • Brioche buns add a sweet contrast but any burger bun can be used.
