Description

Japanese Fruit Sandwiches are a delightful and refreshing treat made with fluffy milk bread, lightly sweetened whipped cream, and a colorful assortment of fresh fruits. These sandwiches are beautifully layered and perfect for a light snack or dessert, showcasing a delicate balance of creamy texture and fruity freshness.

Ingredients

Sandwich Base

  • 6 slices shokupan (milk bread) or regular white bread

Whipped Cream

  • 16 oz (2 cups) heavy cream
  • 2-3 tbsp sugar

Fruits

  • 6 small strawberries, stems removed
  • 1 navel orange, peeled and sliced
  • 2 kiwi, peeled and sliced

Instructions

  1. Prepare Fruit: Slice the orange and kiwi into pieces about the same thickness as the strawberries to ensure an even and visually appealing layering inside the sandwiches.
  2. Make Whipped Cream: In a large mixing bowl, combine the heavy cream and sugar. Beat on high speed using an electric mixer until stiff peaks form, resulting in a smooth and stable whipped cream.
  3. Assemble Sandwich Base: Spread a thin layer of whipped cream evenly on one slice of bread using a spatula, creating a sticky base for the fruit.
  4. Layer the Fruit: Place three fruit pieces in the center of the bread slice aligned with where the sandwich will be sliced later. Fill the rest of the bread slice evenly with more fruit pieces, arranging them attractively.
  5. Cover with Whipped Cream and Top Bread: Add whipped cream to fill any gaps between the fruit pieces and spread a thin layer on top of the fruit. Place a second slice of bread over the cream and fruit to complete the sandwich. Repeat for the remaining slices.
  6. Wrap and Chill: Wrap each sandwich tightly in plastic wrap and mark a cutting line on the wrap to guide slicing later. Refrigerate for at least 2 hours or overnight to allow the flavors to meld and the sandwiches to firm up. Flip the sandwiches after 1 hour for even moisture distribution.
  7. Slice and Serve: Remove the sandwiches from the fridge. Using a sharp bread knife, trim off the crusts, then slice the sandwiches in half along the marked line. Serve immediately for the best texture and freshness.

Notes

  • Using shokupan bread provides the softest texture, but regular white bread works well if unavailable.
  • Adjust sugar in whipped cream to taste, especially if fruits are very sweet.
  • Ensure fruits are sliced evenly for a visually balanced sandwich.
  • Refrigeration is key to prevent bread from becoming soggy and to set the sandwiches.
  • This sandwich is best enjoyed fresh within a day for optimal texture and flavor.
