Ingredients

Peach Syrup

  • 5 peaches, roughly chopped, stones removed
  • ¼ cup maple syrup
  • ¼ cup water
  • 1 tbsp lemon juice

Green Tea Lemonade

  • 6-7 cups water (1.7L – the max line on most electric kettles)
  • 5 green tea bags (jasmine green tea recommended)
  • Juice of ½ lemon (1-2 tbsp)

To Serve

  • 2-4 tbsp peach syrup
  • Ice cubes
  • Peach slices (optional garnish)
  • 1 cup chilled green tea


Instructions

  1. Make Peach Syrup: Add the roughly chopped peaches into a food processor or blender and blend until smooth, which should take about 1-2 minutes.
  2. Cook the Peach Syrup: Pour the peach puree into a small saucepan and add maple syrup and water. Stir and bring the mixture to a boil over medium-high heat, then reduce heat to medium and let it simmer for 10 minutes, stirring every couple of minutes.
  3. Finish Peach Syrup: Remove the saucepan from heat and stir in 1 tablespoon of lemon juice. To get a smooth syrup, strain the mixture through a fine-mesh strainer into a large bowl, though this step is optional.
  4. Cool Peach Syrup: Pour the strained syrup into a heat-proof jar and allow it to cool completely before storing. It can be kept in an airtight container in the fridge for up to 3 days.
  5. Brew Green Tea: Bring 6 to 7 cups of water to a boil using a kettle or large pot. Remove from heat and add the 5 jasmine green tea bags. Steep for 3-5 minutes, then remove the tea bags.
  6. Add Lemon Juice to Tea: Stir in the juice of half a lemon (1-2 tbsp) into the tea. Allow the tea to cool and then refrigerate. It can be stored in an airtight container for up to 3 days.
  7. Prepare Single Serving: In a tall glass, add 2-4 tablespoons of chilled peach syrup, fill the glass with ice cubes and add peach slices if desired. Pour about 1 cup of chilled green tea over the ice and syrup.
  8. Shake for Starbucks Style: For a Starbucks-inspired drink, combine the iced green tea, peach syrup, and ice in a mason jar. Shake well until chilled then pour over ice in a glass.
  9. Pitcher Method: Alternatively, mix the peach syrup and green tea together in a large pitcher. Stir before serving as the peach syrup may settle to the bottom.
