- Infuse Thyme: Bring the mixture to a gentle boil. Once boiling, remove from heat, cover with a lid, and let the thyme steep for 15 minutes to infuse the cream with its flavor.
- Simmer to Concentrate: Remove the thyme sprigs, return the pan to the stove, and bring to a rolling simmer. Keep it simmering gently for 2 to 3 minutes to slightly reduce and thicken the mixture.
- Add Lemon Juice: Remove from heat, whisk in fresh lemon juice. At this stage, the cream will instantly thicken into a velvety texture.
- Cool Mixture: Allow the posset mixture to sit at room temperature for 10–15 minutes to cool slightly.
- Prepare Peaches: Slice the peaches in half and remove the pits. Lightly brush or drizzle lemon juice on the cut sides to prevent browning.
- Strain Mixture: Pour the posset through a fine-mesh sieve to remove any solids and ensure a smooth texture.
- Assemble and Chill: Place the peach halves on a tray or muffin tin to keep them upright. Pour the strained posset mixture into each peach shell. Refrigerate for at least 4 hours or overnight for best results and the ideal thickened consistency.
