Ingredients
Sticky Rice
- 2 cups sweet (glutinous) rice (also called sticky rice)
- 1 (13.5 ounce) can full-fat coconut milk

Instructions
- Soak the rice: Place the sweet rice into a large bowl and cover completely with water. Allow it to soak for at least 1 hour or up to overnight to soften the grains and prepare them for steaming.
- Wrap the rice in cheesecloth: After soaking, drain and rinse the rice thoroughly. Transfer it to the center of a large cheesecloth. Loosely but securely wrap the rice so that none of the grains can escape.
- Prepare the steamer: Using an inverted stainless steel mesh steaming basket placed inside a tall pot, ensure that the basket sits above the water level to prevent the rice from touching the boiling water. This setup mimics a traditional sticky rice steamer.
- Steam the rice: Add about 1 inch of water to the pot, ensuring the water does not touch the rice. Place the wrapped rice on top of the basket, cover tightly with a lid, and bring the water to a boil over high heat. Then reduce to simmer and steam the rice for 15-20 minutes or until the grains become translucent and tender.
- Heat the coconut milk mixture: While the rice is steaming, pour the full can of coconut milk into a saucepan over medium heat. Stir frequently to avoid burning. Add sugar and salt, stirring continuously until fully dissolved. Keep the warm sweetened coconut milk aside.
- Mix steamed rice with coconut milk: Transfer the steamed rice into a large bowl and pour the warm sweetened coconut milk over it. Stir well, then cover and allow the mixture to rest for 5 minutes so the rice can absorb the flavors.
- Prepare coconut cream sauce: In a small saucepan, combine 2/3 cup coconut milk and 3 tablespoons sugar. Bring the mixture to a low boil, then lower the heat and gently simmer until it thickens slightly to a creamy consistency.
- Assemble and serve: Scoop the warm coconut sticky rice onto serving plates. Add sliced fresh mango on the side, drizzle with the coconut cream sauce, and sprinkle lightly with sesame seeds for garnish. Serve immediately for best texture and flavor.
