Ingredients
Potatoes
- 4 pounds russet or Yukon Gold potatoes
Dairy & Cheese
- 6 tablespoons butter
- ½-1 cup whole milk (or any milk)
- 8 ounces cream cheese, cut into cubes and softened
- 2 cups shredded sharp cheddar cheese (white or yellow)
- ½ cup grated Parmesan cheese
Seasonings
- ½-1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- ¼-½ teaspoon garlic powder (optional)
Garnish
- Chopped chives (for garnish)
Instructions
- Prepare Potatoes: Peel the potatoes and cut them into evenly sized 1-inch chunks for uniform cooking.
- Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the mashed potatoes later.
- Cook Potatoes: Place potatoes in a large pot and cover them with cold water about an inch above. Bring to a boil over high heat, then reduce to a simmer. Cook for 12–17 minutes until a fork slides through easily but potatoes remain intact to avoid a heavy or gluey mash.
- Drain and Mash: Drain the cooked potatoes and return them to the hot pot. Add butter, ½ cup of milk, cream cheese, ½ teaspoon salt, black pepper, and garlic powder if using. Mash until mostly smooth, taking care not to over-mash to prevent gumminess.
- Add Cheeses: Stir in Parmesan cheese and 1½ cups of shredded cheddar cheese, mixing well into the mashed potatoes.
- Adjust Consistency and Season: If the mashed potatoes are too thick, add milk 2 tablespoons at a time until you reach your preferred texture. Taste and adjust salt, pepper, and garlic powder as needed.
- Assemble and Bake: Spread the mashed potatoes into a 9×13-inch baking dish. Evenly top with the remaining ½ cup shredded cheddar cheese. Bake in the preheated oven for 15 minutes until hot and cheese is melted and bubbling.
- Keep Warm: To keep warm before serving, cover the dish with foil, lower oven temperature to 250°F (120°C), and keep until ready to serve.
- Prep Ahead Option: For make-ahead convenience, assemble mashed potatoes with cheese topping in the baking dish. Cover tightly with foil and refrigerate up to one day. When ready to serve, bake covered at 350°F (175°C) for 20 minutes, then uncover and bake for an additional 15 minutes to heat through and melt cheese.
Notes
- Do not overcook potatoes to prevent them from absorbing too much water and resulting in gluey mashed potatoes.
- Use Yukon Gold potatoes for a creamy texture or russet potatoes for a fluffier mash.
- Adjust milk type and amount to your dietary preference and desired creaminess.
- For extra flavor, consider adding chopped chives as garnish.
- This recipe can be prepared a day ahead and baked fresh to save time during holiday celebrations.
- Use freshly grated cheese rather than pre-shredded for better melting and flavor.
