Ingredients

For the Salad

  • 8 oz high-protein or whole wheat pasta, any shape you prefer

  • 1 tbsp olive oil

  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • salt to taste
  • 2 finely diced celery stalks
  • 1 cup shredded carrots
  • 3 thinly sliced green onions

For the Dressing

  • ¾ cup plain Greek yogurt
  • ⅓ cup buffalo sauce, like Frank’s RedHot, plus more to taste
  • 2 tbsp ranch seasoning, store-bought or homemade (see notes)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the high-protein or whole wheat pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta and rinse with cold water to stop cooking. Set aside.
  2. Prepare the Chicken: While the pasta cooks, heat olive oil in a skillet over medium heat. Season the chicken breasts with garlic powder, onion powder, smoked paprika, and salt. Cook the chicken breasts for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center. Remove from heat and let rest for a few minutes, then dice or shred the chicken into bite-sized pieces.
  3. Mix the Dressing: In a medium bowl, combine plain Greek yogurt, buffalo sauce, ranch seasoning, and black pepper to taste. Mix thoroughly until smooth and well combined.
  4. Combine Salad Ingredients: In a large mixing bowl, add the cooked pasta, diced chicken, finely diced celery, shredded carrots, and thinly sliced green onions. Pour the buffalo yogurt dressing over the salad and toss gently to evenly coat all ingredients.
  5. Adjust and Serve: Taste the salad and add more buffalo sauce, salt, or pepper if desired. Chill the pasta salad in the refrigerator for at least 10 minutes before serving to allow the flavors to meld. Serve cold or at room temperature as a high-protein meal option.
