Ingredients
Chicken
- 2 chicken breasts
- 2 tablespoons olive oil
- Salt (to taste)
- Pepper (to taste)
Spinach Filling
- 4 cups fresh spinach
- 1/2 onion, diced
- 1 garlic clove, minced
- 3/4 cup ricotta cheese
- 1/3 cup mozzarella cheese
- 1/3 cup Italian Blend cheese
- A pinch of nutmeg
- Salt (to taste)
- Pepper (to taste)
Instructions
- Prepare the spinach filling: Heat olive oil in a skillet over medium heat. Add the diced onion and a pinch of salt, cooking until the onion becomes translucent and lightly browned, which will bring out its sweetness and create a flavorful base.
- Sauté the spinach: Add the fresh spinach to the skillet and cook for a few seconds until just wilted, preserving its vibrant color and nutrients.
- Add garlic: Stir in the minced garlic and cook briefly until fragrant, about 30 seconds, to infuse the filling with aromatic flavor.
- Combine filling ingredients: Transfer the spinach mixture to a bowl. Add ricotta cheese, nutmeg, mozzarella, Italian Blend cheese, and season with salt and pepper. Mix thoroughly until you have a creamy, well-combined filling. Set aside.
- Prepare the chicken: Pat chicken breasts dry with paper towels. Using a sharp knife, carefully slice lengthwise slits across the top of each breast without cutting all the way through, creating pockets to hold the filling.
- Stuff the chicken: Spoon the prepared spinach and cheese mixture evenly into each slit, ensuring the filling is well-distributed inside the pockets.
- Season and arrange chicken: Place the stuffed chicken breasts in a baking dish. Season with salt and pepper and drizzle lightly with olive oil to help the chicken brown beautifully during baking.
- Bake: Preheat your oven to 200°C (400°F). Bake the chicken for 25-30 minutes until cooked through and golden brown on top. The cheese should be melted and the chicken juices run clear when pierced with a fork.
Notes
- Make sure not to cut all the way through the chicken when making slits to keep the filling inside.
- Use fresh spinach for the best texture and flavor, but frozen spinach can be used if well drained.
- For extra flavor, add a pinch of red pepper flakes to the filling mixture if you like a bit of heat.
- Let the chicken rest for a few minutes after baking to help retain juices.
