Description

This Grilled Zucchini with Burrata recipe features tender, smoky zucchini slices marinated with garlic and red pepper, then topped with creamy burrata cheese and fresh basil for a light and flavorful appetizer or side dish.

Ingredients

Zucchini

  • 3 zucchini, cut lengthwise into 1/4 inch slices
  • 1/2 teaspoon salt

Marinade

  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper

Topping

  • 4 ounces burrata cheese (2 balls of 2 ounces each), cut into pieces
  • 1/2 teaspoon dried basil

Instructions

  1. Prepare the zucchini: Slice the zucchini into 1/4 inch thick lengthwise pieces. Arrange the slices on a paper towel-lined baking sheet and lightly sprinkle with 1/2 teaspoon salt. Let them sit for about 15 minutes to draw out excess moisture, then pat dry with paper towels to ensure they grill properly.
  2. Make the marinade: In a shallow dish, combine 3 tablespoons of extra virgin olive oil, minced garlic, and crushed red pepper. Toss the zucchini slices in this mixture, coating them evenly. Allow the zucchini to marinate for about 15 minutes to absorb the flavors.
  3. Grill the zucchini: Preheat your grill. Place the marinated zucchini slices on the grill and cook for 2 to 3 minutes on each side until they are slightly softened and have grill marks, but still maintain some firmness.
  4. Assemble and serve: Transfer the grilled zucchini slices to a serving platter. Cut the burrata cheese into pieces and scatter them over the zucchini. Sprinkle with dried basil. Serve immediately while the dish is warm and fresh.

Notes

  • For a fresh herbal flavor, substitute dried basil with chopped fresh basil if available.
  • You can use a grill pan or outdoor grill depending on availability.
  • Serve as a light appetizer, side dish, or add toasted bread to make it a simple meal.
  • Patting the zucchini dry after salting helps get better grill marks and reduces sogginess.
