Ingredients

For the Base

For the Chicken and Peaches

  • 2 boneless skinless chicken breasts
  • 4 tbsp (30 mL + 30 mL) olive oil, divided
  • 2 Ontario peaches, sliced (or Ontario nectarines)
  • 1/4 cup (60 mL) barbecue sauce (peach sauce recommended)

For the Toppings

  • 1/4 cup (60 mL) pizza sauce
  • 1 1/2 cups (375 mL) shredded mozzarella cheese
  • 1 bunch fresh basil leaves


Instructions

  1. Prepare the Grill: Preheat your grill to medium-high heat to ensure a hot surface for cooking the chicken and peaches.
  2. Cook the Chicken: Brush the chicken breasts with 30 mL olive oil and grill them for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Remove from grill and slice thinly.
  3. Grill the Peaches: Lightly brush peach slices with the remaining 30 mL olive oil and grill for 2–3 minutes per side until grill marks appear and peaches are slightly softened. Remove and set aside.
  4. Prepare the Pizza Base: Roll out the pizza dough to your preferred thickness. Brush the top lightly with olive oil to prevent drying.
  5. Assemble the Pizza: Spread pizza sauce evenly over the dough. Distribute sliced grilled chicken and grilled peach slices over the sauce. Drizzle barbecue peach sauce over the toppings.
  6. Add Cheese: Sprinkle shredded mozzarella cheese generously over all the toppings, ensuring an even layer that covers the pizza.
  7. Grill the Pizza: Place the assembled pizza on a pizza stone or directly on the grill grates. Close the lid and cook for 8-12 minutes or until the crust is crispy and cheese is melted and bubbly. Rotate the pizza halfway through for even cooking.
