Ingredients
Chicken
- 6 small boneless skinless chicken breasts (or 3 large, sliced in half or pounded thin)
- ¼ cup olive oil
- 3 tablespoons Italian seasoning blend
- 1 teaspoon salt
- ½ teaspoon black ground pepper
Sandwich Assembly
- 6 slices mozzarella cheese
- 6 brioche or sesame buns
- ½ cup mayonnaise
- 6 green leaf lettuce leaves
- 6 tomato slices
Instructions
- Prepare the Grill: Preheat your grill to medium direct heat, approximately 350 degrees Fahrenheit, ensuring it is clean and ready for cooking.
- Pound the Chicken: Using a meat tenderizer or mallet, pound each chicken breast until they are evenly thick, about ½ to ¾ inch thick. If using large breasts, cut them in half, using the bun size as a guide.
- Season the Chicken: Brush both sides of the chicken breasts with olive oil, then season evenly with salt, black pepper, and Italian seasoning blend.
- Grill the Chicken: Place the chicken breasts on the preheated grill. Cook for 8-10 minutes, turning once halfway through, until the internal temperature reaches 165 degrees Fahrenheit and the chicken is fully cooked.
- Add Cheese: Remove the chicken from the grill and immediately place a slice of mozzarella cheese on top to allow it to melt slightly from the residual heat.
- Assemble the Sandwich: Spread mayonnaise on the bottom half of each bun, then layer with lettuce and tomato slices. Top with the grilled chicken and cheese, and finish with the top bun.
Notes
- Use a meat thermometer to ensure the chicken is cooked safely to 165°F.
- For extra flavor, you can marinate the chicken for 30 minutes to an hour before grilling.
- If you don’t have a grill, you can use a grill pan or cook in a skillet over medium heat.
- Customize your sandwich with additional toppings like avocado or pickles if desired.
- Allow the chicken to rest for a few minutes off the grill before assembling to retain juices.
