Description

Delicious grilled boneless chicken thighs marinated in a vibrant Greek-inspired mixture of lemon, oregano, garlic, and olive oil. Perfectly charred and juicy, finished with a bright and zesty ladolemono sauce that enhances the Mediterranean flavors.

Ingredients

Chicken and Seasoning

  • 2.5 lbs boneless skinless chicken thighs
  • Salt and pepper (to taste, for seasoning)

Marinade

  • 1 medium to large onion
  • 3-4 garlic cloves
  • 1 tbsp heaping dried Greek oregano
  • 1/3 cup extra virgin olive oil
  • 1 lemon, juice of (about 3-4 tbsp)
  • 1 tsp coarse salt
  • 1/2 tsp pepper

Ladolemono Sauce

  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice

Instructions

  1. Trim the Chicken: Remove any excess fat from the boneless skinless chicken thighs to ensure even cooking and a leaner final dish.
  2. Prepare the Marinade: Using a box grater, grate the onion into a non-reactive container or large freezer bag. Mince the garlic and add it to the container along with lemon juice, dried Greek oregano, salt, pepper, and olive oil. Mix thoroughly and let rest a few minutes to meld the flavors.
  3. Marinate the Chicken: Add the chicken thighs to the marinade and coat all pieces evenly. Cover and refrigerate for 4-6 hours, although overnight is best for maximum flavor infusion.
  4. Bring to Room Temperature and Preheat Grill: Remove chicken from fridge about 20 minutes before grilling to reach room temperature. Preheat grill to high heat to ensure good searing.
  5. Grill the Chicken: Place chicken thighs on the grill and cook for 5-6 minutes per side with the grill lid closed. Flip the pieces and rotate them between center and edges to promote even cooking. Chicken is done when internal temperature reaches 165°F, ideally about 170°F for best texture.
  6. Make Ladolemono Sauce: While chicken is grilling, combine olive oil and lemon juice in a small container with a lid. Shake vigorously until well blended and homogeneous.
  7. Serve and Finish: Transfer grilled chicken to a serving platter and brush or drizzle generously with ladolemono sauce. Season with additional salt and pepper to taste and enjoy the bright, fresh flavors.

Notes

  • Marinating the chicken overnight greatly enhances the flavor and tenderness.
  • Use a meat thermometer to ensure the chicken is cooked safely while retaining juiciness.
  • Ladolemono sauce adds moisture lost during grilling and bright citrus notes.
  • For a spicier kick, add a pinch of crushed red pepper flakes to the marinade or sauce.
  • This recipe pairs wonderfully with grilled vegetables or a Greek salad.
